I love an excuse to go revisit some old posts, especially ones that have been on my list for a while. This is a great salad! We loved it and is a nice variation to a summer chicken salad. I also used a ready made rotisserie chicken so no heating up of the kitchen. This is the best peanut sauce dressing I have come across yet ... a nice blend of flavors.
