Ok, monthly challengers, for our blogaversary, I was trying to find some basic weeknight chicken recipes on this blog and came up way short. So, that is your challenge for this month - chicken. Now, I am picturing something along the lines of your boneless skinless breasts on sale for 2.99/lb, but any chicken recipe will do.
And.
And, and, and. No cheating on this. You are to make one of your chicken standbys to share with the group.
AND make a new recipe to you.
I mean, come on! It's chicken!

I think I can handle two recipes this month :-) Is 2.99 the lowest your boneless skinless chicken breasts go for in your area? I'm still able to get mine on sale for 1.79.
This challenge is vegetarianist! I guess I'll sit this month out unless a recipe that is supposed to have chicken in it but I leave the chicken out and sub a veggie counts :)!
Vivian - it really varies. Sometimes it is down to $1.99.
Lindsey - you are totally right and I apologize. How about you can post what is your "chicken" ie chicken is kind of a weeknight staple, what do you depend on at those times?
We don't really have a protein staple (one of the benefits of eating vegetarian, I suppose). We eat a lot of beans, tofu, grains, mushrooms, etc., but I can save it for another month. I'll still check in this month because I enjoy adapting recipes to make them vegetarian. In fact, this week, we are having the oven-baked chimichangas (with extra pinto beans instead of chicken) that KAJ posted. One of our favorites!
Ok Lindsey, why don't you share chicken recipes that you like to adapt. I think I would like to see how you make some of these things vegetarian.
