Salsa Fresca

We were suppose to go to Chuy's this weekend, but it was too crowded. I was disappointed because I love their Salsa Fresca. I decided to try and make my own and used this Salsa Fresca recipe from Tyler Florence. I made two batches. I felt the first batch was too runny, so I tried squeezing the tomatoes out for the second batch. No luck...

I would definitely add the entire jalapeno because both batches were not hot enough. Go easy on the salt and B said "more garlic!"

I would leave out the olive oil. Maybe that would help.

My favorite fresh salsa recipe is one from CL. Do a search on Salsa Picante and you will find it. Whenever I make this for a party people always ask what brand of salsa it is.

I've been obsessed with the Chuy's fresca salsa for years. After going to the Dallas location yesterday for lunch, I am determined to make this salsa at home. I'd probably blend this recipe just a wee bit to get it like Chuy's. I did find a good recipe for something similiar to Chuy's cream jalapeno.

OK I'm also obsessed with this fresca ... the closest I've come follows:
1 medium onion
2 roma tomatoes
2 serrano raw peppers (I do know this is the pepper they use)
1 Tablespoon fresh cilantro leaves
2 limes - juice only
Rough chop on all and then best done in food processor.

Try it w/o the roma. get a nice garden tomato. you dont want a sweet tomato, it starts tasting like a marinara at that point.
