Chicken O'Neil

Found this recipe for Chicken O'Neil! Love the Irish dishes!!!

This was a pretty good dinner for a week night. I didn't give our kiddos any of the pepper, onions and mushrooms, but B and I thought it was pretty good!!! I actually didn't know what to do with the chicken. I baked it in the oven and then just sliced it as a side to the pasta.

What do you think? Does this count as starting with O? I am using a little artistic interpretation.
