Warm potato salad with Goat Cheese

This is another find from the Cooking Light message board. Let's see, potatoes, goat cheese, how can I not try this. I did the lower fat version with yogurt. It was good, but the yogurt was almost a little to much for the goat cheese. I might like the high fat version better. Anyways, this was good, and I might want to play around with it a bit more. An impressive side item. It is pictured here with green chile cheeseburgers...now THOSE were great!

Ok, I think we should make an exception this month ... you have to post the green chile cheeseburger recipe or do you buy them pre-made at the store?

I'm sorry...I don't understand your question. Pre-made at the store? Basically it is just ground chuck seasoned with salt and pepper, then grilled. The burgers are then topped with a roasted hatch chile pepper and provolone and then you let the cheese melt. Very tasty, but not really on my diet!

Whole Foods sells these pre-made beef patties with jalapeno and cheddar or blue cheese. They are really good ... but the burgers can be pretty spicy, green chile sounds much better. I'll have to give it a try.
