Spiced Stewed Zuchini (Salads and Vegetables) and Basmati Pilaf with Almonds and Cilantro (Grains)
Last night was vegetarian night at our house so we tried two side dishes out of the Greatest Hits book and added a good multigrain bread with cheese. My husband chose to use the stewed zuchini as a topping for the rice and I enjoyed them both seperately. We loved both dishes and I especially loved the chickpeas with the zuchini.

I am finding it hard to believe that Kerri included a stewed zuchini recipe in her cookbook...it goes againist her texture issues. Both presentation look SUPER!!
I wish I could convince DH that zucchini is a great dish! Ugh.
Ha! That's funny. Stewed zuchini is mushy and I normally am not a fan. But the contrasting textures of the chickpeas AND zuchini makes this one a great side. I don't think this made RR's greatest hits as it is really hard to find in her cookbooks, but it goes well with some Indian dishes.
